Julie Sahni offers intensive participation, private courses for professional and non-professional cooks. Starting February 1, 2018 Instruction is available in four formats: 1 day Immersion program, 2 days Intensive program, 3 days Inclusive program or 4 days Comprehensive program. The classes are held mostly during weekends and weekdays but  there are some spanning over both and are limited to three (3) students. All classes are taught year-round in the specially designed teaching kitchen in Chef Sahni's Brooklyn Heights studio.

The 1day format includes 8 hours of instruction, 2 days format includes 12 hours of instruction plus 4 hours Indian market visit, 3 days format includes 16 hours of instruction plus 4 hours Indian market visit, while the 4 days format includes 24 hours of instruction plus 4 hours of Indian market visit. All courses emphasize the use of aromatics in cooking and their effect on the palate. Cooking techniques, appropriate use of Indian spices, herbs and seasonings, and planning healthful, balanced meals are covered in-depth. Historical and cultural background and religious ideologies behind cuisine are also included.

Primary Courses: Classic (Non-vegetarian), Vegetarian (Hindu and Jain), Vegan (Vegetarian or Non-vegetarian), Gluten-free (Vegetarian or Non-vegetarian) and Ayurvedic Healing (Vegetarian or Non-vegetarian) 
Students have the option of registering for either Classic Indian Cooking or one of several Specialty Courses. All options are offered as either an Immesion, Intensive, Inclusive or Comprehensive format. All courses include all materials, detailed notes, a recipe workbook and complete meals. The multi-day courses also include a learning and shopping trip to an an Indian grocery. Course selection for a given time period is on a first-come first-serve basis. In other words, you may select the type and duration of a course if the selected time period has not already been chosen by someone who previously registered.

Classic Indian Cooking
Mogul or 'Classic" cooking of North India, as well as regional Indian cooking is covered in this course, emphasizing light and subtle preparations particularly suited for entertaining. Brahmin cuisine of the Dravidian South and the Jain cuisine of Western India — noted for low-calorie, low-salt dishes and made with natural whole grains, variety of legumes, yogurt, homemade cheese, garden vegetables and fruits — are also covered in depth. Using whole meal flours and special kneading, rolling, and techniques to make Indian breads are an integral part of this course, as well.

Specialty Courses
In addition to full-day courses described above, two 4 hour workshops  are also offered: A Taste of India Workshop and Indian-Chinese Fusion Cuisine Workshop. Please note that these workshops as well as the Immersion Course require a 2-person minimum. If there are already 2 people registered for a workshop or an Immersion Course on a given day, then you alone can register for that day as well. But if nobody is currently registered for a workshop or Immersion Course on the day of your choice, then you would need to register at least 2 people to confirm the workshop or Immersion Course on that day.

Location
Chef Julie's studio is located near the Brooklyn entrance to the Brooklyn Bridge, overlooking the Wall Street area.
