Julie Sahni offers intensive participation, private courses for professional and non-professional cooks. Instruction is available in two formats: 2 days Intensive program or 3½ days Comprehensive program. The classes are held mostly during weekends and weekdays but  there are some spanning over both and are limited to three (3) students. All classes are taught year-round in the specially designed teaching kitchen in Chef Sahni's Brooklyn Heights studio.

The 2-day format includes seventeen (16) hours of instruction, while the 3 ½ days format includes twenty seven (27) hours of instruction. Both courses emphasize the use of aromatics in cooking and their effect on the palate. Cooking techniques, appropriate use of Indian spices, herbs and seasonings, and planning healthful, balanced meals are covered in-depth. Historical and cultural background and religious ideologies behind cuisine are also included. Both courses include complete meals and full-day courses include a trip to an Indian grocery.

Primary Courses
Students have the option of registering for either Classic Indian Cooking or one of several Specialty Courses. Both options are offered as either a 3 1/2-days Comprehensive format or 2-day Intensive format. Both Courses include all materials, detailed notes, a trip to the Indian Market, and a recipe workbook. Course selection for a given time period is on a first-come first-serve basis. In other words, you may select the type and duration of a course if the selected time period has not already been chosen by someone who previously registered.

Classic Indian Cooking
Mogul or 'Classic" cooking of North India, as well as regional Indian cooking is covered in this course, emphasizing light and subtle preparations particularly suited for entertaining. Brahmin cuisine of the Dravidian South and the Jain cuisine of Western India — noted for low-calorie, low-salt dishes and made with natural whole grains, variety of legumes, yogurt, homemade cheese, garden vegetables and fruits — are also covered in depth. Using whole meal flours and special kneading, rolling, and techniques to make Indian breads are an integral part of this course, as well.

Specialty Courses:

Vegetarian, Ayurvedic Healing Vegetarian, Vegan Vegetarian, Gluten-free (all four may be with or without Seafood)
In addition to multi-day courses described above, three (3) one-day workshops  are also offered: Immersion Workshop for eight (8) hours; A Taste of India Workshop for four (4) hours; and Nan, Kulcha & Samosa Workshop for three (4) hours. Please note that these workshops require a 2-person minimum. If there are already 2 people registered for a workshop on a given day, then you alone can register for that day as well. But if nobody is currently registered for a workshop on the day of your choice, then you would need to register at least 2 people to confirm the workshop on that day.

Location
Chef Julie's studio is located near the Brooklyn entrance to the Brooklyn Bridge, overlooking the Wall Street area.
